Egg boats: Baked eggs in bread rolls

egg_boatThis easy breakfast recipe totally won us over. While baking, the bread takes on a delightfully crusty texture, contrasting perfectly with the moist, cheesy eggs. Add this dish to your weekly brunch menu, or make it a light meal with salad on the side.


For 4 people

  • 4 individual bread rolls (oval-shaped works best)
  • 4 eggs
  • 3/4 cup grated Cheddar cheese
  • 8 cherry tomatoes
  • Basil for garnish
  • Sea salt and cracked black pepper

Step 1

Carve out the top of the roll with a knife.

Step 2

Once you’ve finished carving, take the top off.

Step 3

Dig out the insides of the bread with your fingers to make a "boat." Repeat the previous steps with the remaining 3 rolls.

Step 4

Preheat your oven to 330° F. Evenly divide the grated cheddar among the 4 rolls.

Step 5

Break an egg into a bowl, then pour it into the bread boat. Repeat with the remaining 3 eggs and rolls.

Step 6

Cut 2 cherry tomatoes in half for each boat, and place the halves inside at both ends. Place the rolls on a baking sheet and cover them with aluminum foil.

Step 7

Bake the egg boats for 10 minutes. Remove the aluminum foil and cook for 5 more minutes until the egg whites are set.

Let cool and season with sea salt and cracked black pepper. Garnish with fresh basil leaves. Enjoy!
