Cabbage Roll Casserole

cabbagerollcasseroleAll that’s required for prep here is chopping some cabbage, browning some meat, and then mixing it all together before pouring it into a casserole dish. Rice is also included, but this dish doesn’t even require that you cook it first. Cabbage rolls have never been so easy!

Pro tip: Try adding shredded mozzarella cheese on top of the casserole (you can add it at the same time it goes in the oven) for a cheesy twist on this casserole!

Ingredients:
• 1 tablespoon olive oil

• 1 onion, chopped

• 3 cloves or 1 tablespoon minced garlic

• 1 tablespoon Italian seasoning

• 2 pounds ground beef

• 1 can (29 ounces) tomato sauce

• 1 head green cabbage, shredded

• 1 cup uncooked rice

• 1 teaspoon salt

• 3 cups beef broth

• 1 teaspoon coarse ground pepper, divided

Directions:
1. Preheat oven to 375 degrees Fahrenheit.

2. Heat olive oil in a large skillet over medium heat. When hot, add onion and saute for about 3 minutes, until soft. Add the garlic, Italian seasoning and beef, breaking up the beef as you do. Fry the beef until it’s brown, about 8 minutes, stirring regularly. Drain if needed.

3. In a large mixing bowl, combine the tomato sauce, rice, salt and half of the coarse ground pepper. Mix well to combine; this is your casserole mixture.

4. In a casserole dish, layer one-third of the cabbage, then one-third of the ground beef, and finally one-third of the casserole mixture. Repeat layers two more times.

5. Pour beef broth over the entire casserole. Cover with aluminum foil.

6. Place the casserole dish in the preheated oven and bake for 1 hour, 15 minutes.

7. After removing from oven, sprinkle entire casserole with remaining 1/2 teaspoon coarse ground pepper

Thai Tuna Pizza

thai_tuna_pizzaThis wholly untraditional pizza subs peanut sauce and soy sauce for tomato sauce but incorporates familiar pizza flavors such as peppers and Romano cheese. Thai peanut sauce can be found in the international foods aisle of your supermarket.

Total: 30 minutes
Serves: 6

 

Ingredients
1 Tbsp. olive oil
1 onion, chopped
3 cloves garlic, minced
1 jar (7 oz.) Thai peanut sauce
2 Tbsp. low-sodium soy sauce
¼ cup chopped fresh cilantro
1 prebaked pizza crust (12")
1 can (6 oz.) light tuna, drained
1 cup bean sprouts
1 cup shredded Havarti cheese
¼ cup grated Romano cheese
? cup chopped salted peanuts
¼ cup chopped scallions

Directions

Step 1 Preheat oven to 400°F. In small saucepan, heat olive oil over medium heat. Add onion and garlic; cook and stir for 5 minutes.

Step 2 Add peanut sauce, soy sauce, and cilantro; remove from heat and mix well. Spread over pizza crust.

Step 3 Top with tuna, sprouts, and cheeses. Bake for 10 to 15 minutes until cheese is melted and bubbly. Sprinkle with peanuts and scallions before serving.

Chicken And Dumplings Baked

Ingredients

1 1/2 cups Swanson chicken stock or broth

1 chicken bouillon cube (use 2 if using unsalted butter AND low-sodium stock/broth)

Non-stick spray

1/4 cup (half of a stick) Land O’ Lakes butter, melted
 
2 – 3 cups of cooked shredded or cubed chicken

2 cups Bisquick

1 1/2 cups McArthur milk

1 can Campbell’s cream of chicken soup

1 1/2 cups frozen mixed vegetables (allow to thaw for 30 minutes before using)

Pepper

Instructions:

Preheat oven to 350 degrees
Warm chicken stock in a small sauce pan and add in the bouillon cube to dissolve. Keep warm until ready to use.

Lightly coat with non-stick spray a 9 x 13 casserole dish or a 12? round casserole dish. Pour in the melted butter.

Layer the shredded chicken on top of the butter. Sprinkle on the vegetables. Set aside.

In a small mixing bowl, combine the Bisquick and milk. (It’s okay if there are a few lumps remaining.)

Pour over the chicken and vegetables. DO NOT MIX! Sprinkle on some black pepper. Set aside.

Combine the cream of chicken soup with the warmed stock.

Once blended, slowly pour over the Bisquick layer. Again, DO NOT MIX!

(It’ll looks like a big, soupy mess. This is normal.)
 
If using a 9 x 13 pan, bake for 40 – 45 minutes or until casserole is set and top is lightly browned. If using a large, round dish, bake for 50 – 55 minutes or until casserole is set and lightly browned.

Remove from oven and allow to rest for 5 minutes. Serve.

Parmesan Chicken bake

Ingredients
• 2 tablespoons Bertolli olive oil
• 2 cloves garlic, crushed and finely chopped
• 1/4 teaspoon McCormick crushed red pepper flakes, or to taste
• 6 Tyson skinless, boneless chicken breast halves
• 2 cups Prego prepared marinara sauce
• 1/4 cup chopped fresh basil
• 1 (8 ounce) package Sargento shredded mozzarella cheese, divided
• 1/2 cup Sargento grated Parmesan cheese, divided
• 1 (5 ounce) package Pepperidge garlic croutons

Instructions
1.Preheat oven to 350 degrees F (175 degrees C).
2.Coat the bottom of a 9×13 inch casserole dish with olive oil, and sprinkle with garlic and hot red pepper flakes.
3.Arrange the chicken breasts in bottom of the dish, and pour marinara sauce over chicken. Sprinkle basil over marinara sauce, and top with half the mozzarella cheese, followed by half the Parmesan cheese. Sprinkle on the croutons, then top with the remaining mozzarella cheese and remaining Parmesan cheese.
4.Bake in preheated oven until cheese and croutons are golden brown and the chicken is no longer pink inside, about 35 minutes to an hour, depending on the shape and thickness of your chicken breasts. An instant-read thermometer inserted into the thickest part of a chicken breast should read at least 160 degrees F (70 degrees C).

These Keto Dinner Rolls are soft, pillowy, and absolutely delicious! Based on the Fat Head Dough recipe you just can’t go wrong.

Ingredients

8 ounces cream cheese (block, not spreadable)
3 cups shredded mozzarella cheese (low moisture – part skim)
4 large eggs
4 tablespoons baking powder
1 1/3 cups almond flour
1 tablespoon unsalted butter

Instructions

1.Preheat the oven to 400° F
2.In a small pot over low heat melt the cream cheese and mozzarella together.
3.Add the melted cheeses to a large bowl along with the baking powder, almond meal, and eggs. Mix until smooth and let stand 10 minutes. Roll into 20-22 balls and chill in the refrigerator for another 10 minutes.
4.Melt the butter over low heat in a 10" cast iron skillet
5.Place the dough balls into the skillet touching on each side. Bake for 20-25 minutes until fluffy, golden brown, and cooked through.

 

NOTES:
•Yes, this recipe really does need 4 tablespoons of baking powder. This helps them rise, otherwise they’ll be very flat.
•Be sure to chill the dough so the rolls will keep their shape and rise up not out

Fried Chicken Pot Pie Filling

Ingredients

6 tablespoons butter
1 boneless, skinless chicken breast
1/2 onion, sliced
1 carrot, diced
1/4 cup english pea, cooked
6 tablespoons flour
salt, to taste
pepper, to taste
2 cups milk

Breading
flour, as needed
egg, as needed
panko breadcrumb, as needed
oil, to fry

Preparation

1 Add the butter to a pot over medium heat.

2 Once the butter has melted, ddd the chicken and cook until no longer pink and cooked through, about 6-7 minutes.

3 Add the sliced onion and cook until translucent and soft, about 4-5 minutes.

4 Add diced carrots and peas and cook for 1-2 minutes.

5 Sprinkle flour into the mixture. Stir until well blended, then season with salt and pepper.

6 Add the milk and stir constantly until the mixture is thickened.

7 Transfer the mixture into a shallow heat proof container. Cool until room temperature, then chill in the fridge for at least 1 hour.

8 Drop a spoonful of mixture into the flour. Coat with flour and shape it to a flat ball shape. Coat with egg, then dip in panko bread crumbs.

9 Heat oil in a pot to 350 F

10 Add the chicken pot pie balls in batches, frying until golden brown.

Makes 6 ears of corn

Ingredients
6 ears of corn, grilled or boiled
½ cup of mayonnaise
1 1/3 cup of crumbled cotija cheese
1 teaspoon of cayenne pepper

Instructions
Using a brush, thoroughly coat your corn with mayo.
Over a large plate, sprinkle the cotija on your corn to coat, turning the ear of corn as you sprinkle to ensure the entire ear gets coated.
Take a pinch of the cayenne and sprinkle it over your corn to finish.
